Has it been that long since I wrote something? My goodness! My apologies. I was just thinking about last night's dinner and thought, "I should've blogged that!" So here I am :-) I almost wasn't going to cook and just have leftovers because I was too hungry, but I decided since my husband will not be home for dinner today(Wednesday because of golf) I would cook yesterday and do leftovers today. So, within 25 minutes it was done and good!
2 chicken breasts halved, with homemade sofrito, a little Adobo, Thyme, Marjoram, Oregano and Rosemary, sauteed in olive oil.
Topped with carrots, quinoa and sauteed cucumber. (this I made in a frying pan, with olive oil and about 1/4 c. water, added sliced carrots to cover the bottom of the pan and less than a 1/4 cup of quinoa, put the lid on and let it simmer for 20 minutes then put it over the chicken and quickly sauteed the sliced cucumber and put that over the chicken as well)
